Flavour is not the sum of what is present

Culinary analysis commonly asks which ingredients, aromas and textures are present. Yet a diner does not encounter a dish as a blank observer. Names, colours, shapes, aromas, context and prior memory generate predictions before food reaches the mouth. A red colour may suggest sweetness, a golden crust may promise crispness, and a traditional name may activate a familiar aromatic pattern. When that promise is not fulfilled, the result is not simply nothing; it is an experience with direction, intensity and consequences.

Prior experiments show that food evaluation is multisensory and expectation-sensitive. Product naming can alter sensory and hedonic response; modified biting sounds can change perceived crispness and freshness; and colour can guide odour description. MTSA begins from this established neighbourhood but asks a distinct question: what happens when the absence of an expected stimulus becomes a perceptible element of tasting?

We taste not only the dish, but also the difference between what we encounter and what we expected to encounter.

2. Theoretical claim and scope

MTSA is an original and innovative conceptual theory formulated by Chef Ahmad Maadarani to treat absence as an analysable component of tasting. Its originality concerns the construct, the SAF-6 framework and their systematic application to culinary design and judging. It does not imply that every underlying phenomenon concerning expectation or multisensory perception is previously unknown.

The theory is not a physical law, a validated psychometric scale or the outcome of a clinical trial. Its current value is explanatory, applied and generative: it offers precise questions, a professional vocabulary and testable research directions. Causal claims remain subject to independent empirical validation.

3. Operational concepts

Sensory absence is the diner&apos;s perception that a sensory or semantic cue expected in a defined context has failed to appear, or the chef&apos;s intentional displacement of that cue to alter attention, rhythm, meaning or balance.

Sensory expectation is a prior estimate of what is likely to emerge during eating, formed by intrinsic cues such as colour, visible texture and aroma, and extrinsic cues such as naming, description, serviceware and cultural context.

Absence gap is the perceived distance between the sensory promise and its fulfilment. It is not inherently negative; depending on intention, compensation and coherence, it may produce disappointment, curiosity, surprise or relief.

Functional compensation occurs when the role of an absent element is transferred to another ingredient, technique or stage. Compensation restores a required function - moisture, structural linkage, contrast or aromatic length - without necessarily imitating the removed material.

Identity authenticity is the degree to which the dish&apos;s name, narrative and cultural reference remain honest in relation to the experience delivered.

4. What MTSA does not mean

MTSA distinguishes five related but non-equivalent conditions:

1. Ingredient omission is a material fact and may have no perceptual consequence.
2. Sensory masking occurs when a present cue is obscured by temperature, intensity, crowding or technique.
3. Crossmodal incongruence is a conflict between two present cues.
4. Expectation disconfirmation is the difference between predicted and actual experience; it may contribute to sensory absence but is not identical to it.
5. Technical failure is an unintended result, such as a crust that has lost its crispness. It does not become innovation merely through retrospective explanation.

Sensory absence in the full MTSA sense arises when the missing or obscured cue creates a describable effect on attention, judgement, meaning or sequence.

5. Central conceptual relation

The theory can be represented through a non-metric symbolic relation:

Perceived experience = actual presence + prior expectation - absence gap + transformation effect

The operators are not measurement units and cannot produce a total score. A large gap may be negative when compensation is weak, yet productive when it creates an intelligible reveal, a coherent reinterpretation or a successful rhythmic transition.

6. Seven principles

1. Expectation precedes tasting: absence cannot be interpreted without identifying the promise created before consumption.
2. Absence is context-relative: the same missing cue may be critical in a heritage dish and irrelevant in a free-form creation.
3. Value lies in function: absence should be judged by what it does, not merely by what was removed.
4. Compensation transfers function, not material: removing fat may require another source of roundness or moisture, not an imitation of fat.
5. Identity has a limit: innovation does not justify a name that promises essential qualities no longer delivered.
6. Sensory silence shapes rhythm: a low-intensity interval may prepare the palate, while uncontrolled emptiness breaks the sequence.
7. Intention does not cancel accountability: a chef must identify the change, purpose, transferred function and evidence of success.

7. Patterns and domains of absence

MTSA identifies intentional, functional, misleading, cultural, emotional, rhythmic and unintended technical absence. A dish may combine several patterns, but the dominant and secondary patterns should be stated.

Absence may appear visually, olfactorily, gustatorily, orally/tactually, acoustically, thermally, temporally or semantically. A missing cue in one channel may be compensated through another, but crossmodal compensation succeeds only when it preserves an intelligible function rather than adding sensory noise.

8. The SAF-6 framework

SAF-6 is a descriptive six-axis instrument. A training score from zero to five may be assigned only when accompanied by a written rationale and an observable note.

The scores must not be mechanically totalled. High gap is not a virtue; high intention does not repair technical failure. Relationships matter. A high gap paired with high intention, compensation and coherence may indicate successful innovation. A high gap with weak compensation more often indicates deficiency or misdirection.

9. Levels of certainty

Professional assessment should separate observation, inference and judgement. “No fracture sound occurred on the bite” is an observation. “Moisture may have masked crispness” is an inference. “The promised structural contrast failed and no alternative performed its function” is a professional judgement. This separation reduces the risk of presenting personal preference as general fact.

10. Testable hypotheses

- H1 - Expectation amplification: a clearer prior promise increases perceived absence when the product is held constant.
- H2 - Functional compensation: a successful transfer of function reduces the negative effect of the absence gap.
- H3 - Transparent intention: an honest explanation may improve acceptance of deliberate absence, but cannot erase technical failure.
- H4 - Cultural expertise: diners with a stronger cultural or professional reference will report a larger absence gap for identity-bearing cues.
- H5 - Crossmodal transfer: compensation in one sensory channel can reduce absence in another when it preserves the missing function.
- H6 - Identity threshold: beyond a certain removal of essential identity markers, authenticity declines faster than perceived innovation rises.

These are research hypotheses, not established findings, and may be falsified or revised.

11. Preliminary experimental protocol

A controlled study may compare a stable reference dish with a version missing one functional cue. Each version is presented under a neutral description and a description that generates strong expectation. A third condition restores the missing function without restoring the original material. Participants are randomised; experts and non-experts are analysed separately; cultural familiarity is recorded. Expectation is measured before tasting, followed by gap intensity, acceptance, trust and identity authenticity. Open descriptions should accompany numeric scales. Temperature, service time, recipe, portion and tableware are controlled. The analysis plan should be preregistered and negative results reported.

Support for MTSA would require more than a change in liking. It would require a reproducible pattern connecting expectation strength to perceived absence and showing how compensation, intention and authenticity modify that relation.

12. Dish design protocol

The chef documents the dish&apos;s promise, the cue to be displaced, the cue&apos;s original function, the compensation or deliberate void, the moment at which absence will be discovered, the bridge that makes the transition intelligible, expected cultural differences, the honesty of the name and the failure criterion that would trigger redesign.

A dish that looks like an acidic dessert but tastes savoury does not succeed by surprise alone. An aromatic or textural bridge must make the transition understandable. Without it, appearance becomes deception; with it, the expectation gap may become meaning.

13. Professional judging

A judge should not penalise a dish merely because a personally familiar element is absent. The source of expectation must first be identified: competition brief, dish name, technical standard, cultural convention or private memory. The effect is then described, compensation examined and identity authenticity judged.

“Something is missing” is weak feedback. A more accountable statement is: “The surface promised a distinct fracture, but moisture removed the contrast and no alternative element performed the structural function.” SAF-6 should supplement, never replace, technical tasting, food safety and contextual judgement.

14. Relation to prior knowledge

MTSA intersects with expectation, disconfirmation, multisensory integration and sensory-specific satiety, but is not equivalent to any of them. Expectation research asks how prior information influences evaluation; MTSA centres the discovered absence as an analytical object. Crossmodal work examines interactions among signals; MTSA also asks what function was carried by a signal that did not arrive. Sensory-specific satiety concerns hedonic change through repeated consumption; sensory silence in MTSA is a designed interval within the dish or meal.

The references define the scientific neighbourhood and help generate experiments. They do not pre-prove MTSA or transfer ownership of its formulation.

15. Limitations and misuse

Judgements vary with culture, expertise, age, language, health and context. Assessors may confuse preference with absence, justify poor execution through claimed intention or overestimate the promise created by a name. The framework must not be used to diagnose sensory or medical conditions. Expectations should be recorded before tasting, observations separated from explanations, recipe changes documented, experiments replicated and failed predictions reported.

16. Conclusion

Sensory absence moves culinary thinking from “What did I put in the dish?” to “What did I make the diner expect, and what happened when it did not arrive?” Omission becomes a decision, emptiness becomes a design material and expectation becomes a responsibility. MTSA and SAF-6 provide an initial vocabulary that can be taught, criticised, tested and refined. Their future strength will rest on clear experiments, replicable evidence and more accountable professional judgement.
